Preparation

    Prepare the Sausage

    In a large skillet over medium heat, add the spicy Italian sausage. Cook until browned and fully cooked, about 8-10 minutes, breaking it apart with a spatula as it cooks. Drain excess grease and set aside.

    Roast the Onions

    In the same skillet, add a small amount of olive oil if needed. Add the medium roasted red onion and sauté for about 5 minutes until they are caramelized and tender.

    Chop the Vegetables

    While the sausage and onions are cooking, mince the garlic, chop the tomatoes into small cubes, and roughly chop the fresh oregano.

    Combine Ingredients

    In a large mixing bowl, combine the cooked sausage, sautéed onions, minced garlic, chopped tomatoes, and fresh oregano. Mix well.

    Add Sauce and Cheese

    Pour the tomato sauce into the sausage mixture and stir until everything is evenly coated. Then, fold in the mozzarella and Romano cheeses, reserving a little of each for topping.

    Add Pickled Peppers

    Finally, add the spicy Calabrian pickled peppers to the mixture and stir to combine.

Cooking

    Bake the Mixture

    Preheat your oven to 375°F (190°C). Transfer the mixture to a greased baking dish, spreading it evenly. Top with the reserved mozzarella and Romano cheese.

    Cook in Oven

    Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the edges are slightly golden.
