    Make the Base

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until just below boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks and granulated sugar until pale and thick.

    Temper the Egg Mixture

    Slowly pour about half of the hot milk mixture into the egg yolk mixture, whisking constantly to temper the yolks. Then pour the tempered yolk mixture back into the saucepan.

    Cook the Mixture

    Cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes).

    Cool the Base

    Remove from heat and stir in the vanilla extract. Pour the mixture into a bowl and cool at room temperature. Then refrigerate until thoroughly chilled (at least 4 hours or overnight).

    Churn the Gelato

    Once the base is chilled, churn it in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 2 hours before serving.
