Prepare the Bread

Preheat your oven to 350°F (175°C). Cut the day-old bread into cubes and place them in a large mixing bowl.

Make the Custard Mixture

In a separate bowl, whisk together the milk, heavy cream, eggs, salt, and black pepper until well combined.

Combine Bread and Custard

Pour the custard mixture over the bread cubes, making sure all pieces are well coated. Let it sit for about 15 minutes to absorb the liquid.

Add Cheese and Chives

Fold in the grated Parmesan cheese and chopped fresh chives into the bread mixture until evenly distributed.

Bake the Pudding

Transfer the mixture to a greased baking dish and spread it out evenly. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

Cool and Serve

Remove from the oven and allow to cool for a few minutes before serving. Garnish with additional chives if desired.
