Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips (about 1/4 inch thick) to form fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain and pat dry the soaked fries. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove the fries from the oil using a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.

Serve
Serve the fries hot with ketchup on the side for dipping.
