Preparation

  1. 1

    Prepare the Ingredients

Chop all vegetables: bamboo shoots, carrots, potatoes, onions, and tomatoes into bite-sized pieces. Rinse the spinach and set it aside. Press the tofu to remove excess moisture and cut it into cubes.

  2. 2

    Soak Chickpeas

If using dried chickpeas, soak them overnight in water. If using canned chickpeas, rinse and drain them.

Cooking

  1. 3

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté for about 5 minutes until the onions are translucent.

  2. 4

    Add Vegetables

Stir in the carrots, potatoes, bamboo shoots, and tomatoes. Cook for another 5-7 minutes.

  3. 5

    Incorporate Spices

Add the curry powder, salt, and black pepper to the pot. Stir well to coat the vegetables with the spices.

  4. 6

    Add Liquids

Pour in the vegetable broth and coconut milk. Bring the mixture to a boil.

  5. 7

    Simmer

Once boiling, reduce the heat to low and let it simmer for about 15 minutes, or until the vegetables are tender.

  6. 8

    Add Proteins

Stir in the tofu and chickpeas. Continue to simmer for another 5-10 minutes to heat through and allow the flavors to meld.

  7. 9

    Add Spinach

Finally, add the spinach to the pot, stirring until wilted. Adjust seasoning with more salt and pepper if needed.

Serving

  1. 10

    Serve the Stew

Ladle the bamboo stew into bowls and serve hot. Optionally, garnish with fresh herbs if desired.
