Preparation

Prepare the Glass Noodles

Soak the glass noodles in warm water for 15-20 minutes until softened. Drain and set aside.

Chop Vegetables

Julienne the carrot and bell pepper. Chop the broccoli into small florets. Mince the garlic and slice the green onions.

Prepare the Sauce

In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and chili paste. Set aside.

Cooking

Stir-Fry the Vegetables

In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the garlic and stir-fry for 30 seconds until fragrant. Add the carrots, bell pepper, and broccoli. Stir-fry for about 3-4 minutes until they are tender-crisp.

Add Protein (if using)

If using shrimp, add them to the skillet and stir-fry until they turn pink and are cooked through, about 2-3 minutes.

Combine Noodles and Sauce

Add the softened glass noodles and sauce to the skillet. Toss everything together gently and stir-fry for an additional 2-3 minutes until everything is well combined and heated through.

Serving

Remove from heat and sprinkle sesame seeds and chopped cilantro on top. Serve hot.
