Preparation of Noodles

    Soak Glass Noodles

    In a large bowl, soak the glass noodles in boiling water for about 15 minutes, or until they are soft and pliable. Drain and set aside.

    Chop Vegetables

    While the noodles are soaking, wash and chop the carrot, bell pepper, and green onions. Cut the broccoli into small florets and trim the ends of the snow peas.

Cooking the Protein

    Prepare Tofu or Eggs

    If using tofu, cut it into cubes and sauté in a non-stick skillet with a little oil until golden brown. If using eggs, beat them in a bowl and scramble them in the skillet until fully cooked. Set aside.

Stir-Frying

    Stir-Fry Vegetables

    In the same skillet, add a tablespoon of oil and heat over medium-high heat. Add the chopped garlic and ginger, stirring for about 30 seconds until fragrant. Then, add the chopped vegetables (carrot, bell pepper, broccoli, and snow peas) and stir-fry for about 5-7 minutes until tender-crisp.

    Combine Noodles and Sauce

    Add the soaked glass noodles to the skillet along with the soy sauce, sesame oil, and chili flakes. Toss everything together for 2-3 minutes until the noodles are well coated and heated through.

    Finally, add the cooked tofu or scrambled eggs to the skillet. Gently toss to combine everything evenly and cook for an additional 1-2 minutes.

Serving

    Remove the stir-fried glass noodles from the heat. Garnish with chopped green onions and serve immediately while hot.
