    Prepare the Vegetables

    Wash and cut the eggplants into 1-inch cubes. Slice the red and green bell peppers into strips. Mince the garlic and chop the onion.

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute.

    Add the cubed eggplant to the skillet and stir well. Cook for about 5-7 minutes, stirring occasionally, until the eggplant becomes tender and slightly browned.
