Preparation

    Prepare the Marinade

    In a bowl, combine olive oil, soy sauce, honey, minced garlic, black pepper, paprika, and salt. Mix well until all ingredients are fully combined.

    Marinate the Meat

    Place the turkey breast and steak in a large resealable bag or container. Pour the marinade over the meat, ensuring it is well coated. Seal the bag or container and refrigerate for at least 4 hours, preferably overnight.

Smoking

    Prepare the Smoker

    Soak the hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Turkey

    Remove the turkey from the marinade and let it come to room temperature. Place it in the smoker and add the soaked hickory wood chips. Smoke for about 2-3 hours or until the internal temperature reaches 165°F (74°C).

    Smoke the Steak

    After the turkey is done, remove it from the smoker and let it rest. Increase the smoker temperature to 275°F (135°C). Place the steak in the smoker and add more soaked hickory wood chips. Smoke for about 1-1.5 hours or until the internal temperature reaches your desired doneness (130°F/54°C for medium-rare, 140°F/60°C for medium).

Serving

    Rest and Slice

    Once smoking is complete, allow both the turkey and steak to rest for at least 10 minutes before slicing. This helps retain juices.
