    Prepare the Marinade

    In a medium bowl, whisk together olive oil, soy sauce, honey, garlic powder, onion powder, smoked paprika, black pepper, salt, rosemary, and thyme until well combined.

    Marinate the Meat

    Place the turkey breast and steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the meat, ensuring it is well coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Smoking

    Prepare the Smoker

    Soak the hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Turkey

    Remove the turkey from the marinade and let it come to room temperature for about 30 minutes. Place it in the smoker, skin-side up, and add the hickory wood chips to the smoker box. Smoke for about 4 hours or until the internal temperature reaches 165°F (74°C).

    Smoke the Steak

    While the turkey is smoking, remove the steak from the marinade and let it come to room temperature. Once the turkey is close to being done, place the steak in the smoker for about 1-1.5 hours, or until it reaches your desired doneness (medium-rare is 135°F/57°C, medium is 145°F/63°C).

Serving

    Serve

    Once both the turkey and steak have reached their desired temperatures, remove them from the smoker. Let the meat rest for 10-15 minutes before slicing. Serve with your favorite sides.
