Brisket Preparation

    Prepare the Brisket

    Preheat your smoker to 225°F (107°C).

    Season the Brisket

    In a small bowl, mix together the smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub this spice mix all over the brisket. Drizzle olive oil on top and rub it in for added moisture.

    Smoke the Brisket

    Place the brisket in the smoker and smoke for about 10-12 hours or until it reaches an internal temperature of 195°F (90°C). Wrap in foil during the last few hours if it starts to dry out.

    Rest the Brisket

    Once the brisket is done, remove it from the smoker and let it rest for at least 30 minutes before slicing.

    Slice the Brisket

    After resting, slice the smoked brisket against the grain into thin strips.

    Assemble the Wrap

    Lay a large flour tortilla flat on a clean surface. Add a handful of coleslaw mix, a generous amount of sliced smoked brisket, drizzle BBQ sauce, and add pickles and sliced jalapeños.

    Fold in the sides of the tortilla and then roll it up tightly from the bottom. Repeat with remaining tortillas.

    Cut the wrapped tortillas in half and serve with additional BBQ sauce on the side.
