Preparation of Brisket

Season the Brisket
In a small bowl, combine salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Rub the mixture all over the brisket evenly. Apply mustard on the brisket as a binder for the seasoning.

Wrap and Refrigerate
Wrap the seasoned brisket in plastic wrap or foil. Refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate.

Prepare the Smoker
Soak hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Once the smoker is preheated, drain the wood chips and add them to the smoker box or directly on the coals.

Place the brisket fat side up on the smoker rack. Close the lid and smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).
