Cookie Ingredients

Method

  1. 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

  2. 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

  3. 3

In a large mixing bowl, use an electric mixer to cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.

  4. 4

Add the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract until fully incorporated.

  5. 5

Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined.

  6. 6

Gently fold in the crushed pineapple and shredded coconut until evenly distributed throughout the dough.

  7. 7

Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.

  8. 8

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. The centers may look slightly underbaked; they will firm up as they cool.

  9. 9

Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
