    Prepare Caprese Salad

    Slice the fresh mozzarella and tomatoes into thick slices. Arrange them on a serving platter, alternating between mozzarella and tomato slices.

    Add Basil and Dressing

    Tear the fresh basil leaves and sprinkle them over the mozzarella and tomatoes. Drizzle with olive oil and balsamic reduction. Season with salt and black pepper to taste.

    Let the appetizer rest for about 10 minutes before serving to allow the flavors to meld.

Main Course

    Prepare Chicken

    Preheat oven to 375°F (190°C). Season chicken breasts with salt and black pepper on both sides.

    Sauté Garlic and Herbs

    In a large skillet, melt butter over medium heat. Add minced garlic and fresh rosemary, sauté for 1-2 minutes until fragrant.

    Cook Chicken

    Add the seasoned chicken breasts to the skillet and sear for 4-5 minutes on each side until golden brown.

    Transfer the skillet to the preheated oven and bake for 20 minutes or until the chicken is cooked through.

    Blanch Asparagus

    While the chicken is baking, bring a pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes until tender-crisp. Drain and set aside.

    Chop the dark chocolate and place it in a heatproof bowl. In a saucepan, heat the heavy cream over medium heat until just boiling.

    Pour the hot cream over the chopped chocolate and let it sit for 2 minutes. Stir until smooth and combined. Add vanilla extract.

    Chill Ganache

    Let the ganache cool slightly, then pour into serving dishes and refrigerate for at least 1 hour until set.

    Serve with Berries

    Garnish the chocolate ganache with fresh berries and mint leaves before serving.
