Preparing Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes. Remove from heat and let it sit covered for another 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice has finished resting, fluff it with a fork and gently fold in the vinegar mixture. Let the rice cool to room temperature.
Making Ahi Poke

Mix Ahi Poke Ingredients
In a mixing bowl, combine diced ahi tuna, soy sauce, sesame oil, minced red chile, and chopped green onions. Gently toss to coat the tuna evenly. Allow to marinate for 10-15 minutes.
Preparing Lemongrass Aioli

In a small bowl, combine mayonnaise, lemongrass paste, minced garlic, and lime juice. Mix well until smooth and creamy.

Assemble the Bowl
In a serving bowl, start with a base of sushi rice. Top it with the marinated ahi poke, sliced avocado, and a drizzle of lemongrass aioli. Sprinkle with furikake seasoning and toasted sesame seeds.
