Method

Preparing the Hanger Steak

    Season the Steak

    Sprinkle the hanger steak with salt and black pepper on both sides and let it rest for 15 minutes.

    Cook the Steak

    Heat a grill or skillet over high heat. Sear the steak for 4-5 minutes on each side for medium-rare, brushing with Korean BBQ sauce during the last minute of cooking. Remove from heat and let it rest for 5 minutes before slicing.

Making the Red Chile Slaw

    Combine Ingredients

    In a large bowl, mix together the sliced red cabbage, grated carrot, and sliced red bell pepper.

    Prepare Dressing

    In a small bowl, whisk together the rice vinegar, sugar, salt, and red chili flakes until the sugar dissolves.

    Toss Slaw

    Pour the dressing over the cabbage mixture and toss well to combine. Let it sit for at least 15 minutes for the flavors to meld.

Making the Ginger Aioli

    Combine Ingredients

    In a bowl, combine the mayonnaise, grated ginger, minced garlic, lemon juice, and salt. Mix well until smooth.

Cooking the Brussels Sprouts

    Prepare Brussels

    Preheat the oven to 400°F (200°C).

    Season and Roast

    Toss the halved Brussels sprouts with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden brown and crispy.

Assembling the Bowl

    Slice the Steak

    Thinly slice the rested hanger steak against the grain.

    Build the Bowl

    In a bowl, layer the sliced hanger steak, red chile slaw, roasted Brussels sprouts, and pickles. Drizzle with ginger aioli on top.
