Preparation

Preparing the Chicken

1. Season the Chicken

In a small bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Rub this spice mixture all over the chicken thighs.

2. Sear the Chicken

In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken thighs, skin-side down, and sear for about 5-7 minutes until the skin is golden brown. Flip and sear the other side for an additional 5 minutes.

3. Braised Chicken

Once seared, remove the chicken from the skillet and set aside. In the same skillet, you can prepare the braised greens.

Cooking the Braised Greens

4. Sauté the Garlic

In the skillet, add minced garlic and sauté for 1-2 minutes until fragrant.

5. Add Greens and Broth

Add the chopped kale or collard greens to the skillet along with vegetable broth, red wine vinegar, salt, and black pepper. Stir well.

6. Braised Greens Cooking

Place the seared chicken thighs on top of the greens. Cover the skillet and reduce heat to low. Allow to braise for about 30 minutes.

Preparing the White Beans

7. Sauté Garlic

In a separate saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes.

8. Add White Beans

Add the canned white beans (drained and rinsed) to the saucepan along with fresh thyme, salt, and black pepper. Stir to combine.

9. Cook the Beans

Cook for about 5-10 minutes until heated through. Set aside.

Making the Red Wine Jus

10. Sauté Shallots

In the same skillet used for the chicken, add minced shallots and sauté until translucent.

11. Deglaze the Skillet

Pour in the red wine and chicken stock, scraping up any browned bits from the bottom of the skillet. Bring to a boil and reduce by half.

12. Finish the Jus

Remove from heat and stir in butter, salt, and black pepper until butter is melted and the jus is smooth.

Assembling the Dish

13. Plate the Dish

On a serving plate, place a generous amount of the braised greens and white beans. Top with a chicken thigh and drizzle with red wine jus.

14. Garnish

In a bowl, combine chopped heirloom tomatoes, fresh basil, olive oil, salt, and black pepper. Spoon this mixture over the chicken for a fresh garnish.
