Method
For the Chicken Wings
- 1
Prepare the Chicken Wings
In a large bowl, combine the chicken wings, jerk seasoning, brown sugar, coconut milk, minced habanero, and salt. Mix well to ensure the wings are coated evenly. Let marinate for at least 30 minutes, or preferably overnight in the refrigerator for best flavor.
- 2
Cook the Chicken Wings
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the marinated chicken wings on the baking sheet, ensuring they are spread out evenly. Drizzle with vegetable oil. Bake for 40-45 minutes, turning halfway through, until the wings are golden brown and cooked through.
For the Coconut-Lime Slaw
- 3
Prepare the Slaw
In a large mixing bowl, combine the shredded cabbage, grated carrots, and chopped cilantro. In a separate bowl, whisk together the lime juice, coconut yogurt, and salt to create the dressing.
- 4
Mix the Slaw
Pour the dressing over the cabbage mixture and toss well to combine. Adjust seasoning as needed, adding more salt or lime juice to taste. Allow the slaw to sit for 10-15 minutes to allow the flavors to meld before serving.
