Wash and peel the Russet potatoes. Cut them into even-sized fries, about 1/4 inch thick, ensuring they cook evenly.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure a crispy finish.

In a large bowl, combine the dried fries with olive oil, smoked sea salt, and chopped rosemary. Toss until the fries are evenly coated.

Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

In a small bowl, combine mayonnaise, chopped basil, minced garlic, lemon juice, and salt. Mix well until all ingredients are thoroughly combined.
