Prepare the Chicken
Pat the Amish chicken breasts dry with paper towels. Season both sides with salt, black pepper, and fresh thyme.

Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and sear for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.

Add Beans and Stock
Add the canned white beans and chicken stock to the skillet. Bring to a simmer and cook for 10 minutes.

Blend the Velouté
Using an immersion blender, blend the mixture until smooth. Stir in heavy cream, salt, black pepper, and chopped parsley. Simmer for an additional 5 minutes.
