Preparation of Cauliflower

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Cauliflower
Remove the leaves and stem from the cauliflower head. Cut it into florets of roughly equal size to ensure even cooking.

Season the Cauliflower
In a large bowl, combine the cauliflower florets, olive oil, harissa paste, salt, and pepper. Toss well to coat all florets evenly.

Roast the Cauliflower
Spread the seasoned cauliflower florets in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, flipping halfway through.

Prepare the Toppings
While the cauliflower is roasting, prepare your toppings. Chop the fresh herbs and set aside.

Once the cauliflower is roasted, remove it from the oven. Serve warm, topped with a generous dollop of yogurt, a sprinkle of pepitas, pickled onions, and fresh herbs.
