Prepare the Mahi Fish

Marinate the Fish
In a bowl, combine olive oil, lime juice, garlic powder, paprika, salt, and black pepper. Add the Mahi Mahi fillets and coat them well. Let it marinate for at least 15 minutes.

Cook the Fish
Heat a grill or skillet over medium-high heat. Add the marinated Mahi Mahi fillets and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork. Remove from heat and let rest for a few minutes before flaking into pieces.
Make the Chimichurri

Combine Ingredients
In a food processor, combine chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Blend until finely chopped but not pureed. Adjust seasoning as needed.
Prepare the Salsa

Mix Salsa Ingredients
In a bowl, combine diced tomatoes, red onion, minced jalapeño, chopped cilantro, lime juice, and salt. Mix well and let it sit for at least 10 minutes to meld the flavors.
Assemble the Tacos

Warm the Tortillas
Warm the corn tortillas on a skillet or directly over a flame for a few seconds on each side until pliable.

Build the Tacos
On each tortilla, add a handful of shredded cabbage, a portion of flaked Mahi Mahi, a few slices of avocado, a spoonful of salsa, and a drizzle of chimichurri. Serve immediately.
