Pickled Onion

Prepare the Pickled Onion
In a bowl, combine the sliced red onion, apple cider vinegar, sugar, and salt. Stir until the sugar and salt dissolve. Let it sit for at least 30 minutes to pickle.
Avocado Crema

Make the Avocado Crema
In a blender, combine the ripe avocados, lime juice, sour cream, and salt. Blend until smooth and creamy. Adjust seasoning if needed.

Fry the Tostadas
In a frying pan, heat the vegetable oil over medium heat. Fry each corn tortilla until golden and crispy, about 2-3 minutes per side. Drain on paper towels and set aside.

Cook the Shrimp
In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and red chile flakes, cooking for about 1 minute until fragrant. Add the shrimp, salt, and black pepper. Cook for 3-5 minutes, or until the shrimp turn pink and opaque.

On each tostada, spread a generous amount of avocado crema. Top with the cooked garlic chile shrimp, diced tomatoes, and pickled onions. Garnish with chopped cilantro and serve with lime wedges.
