Preparing the Brussels Sprouts

Clean and Prepare
Trim the stem ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Fry the Brussels Sprouts
In a large pot or deep fryer, heat the vegetable oil over medium-high heat. Once hot, carefully add the Brussels sprouts in batches and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.
Making the Fish Sauce Vinaigrette

Combine Ingredients
In a small bowl, whisk together the fish sauce, lime juice, sugar, and minced garlic until well combined. Set aside.
Making the Shallot Crisp

Fry the Shallots
In a small saucepan, heat the vegetable oil over medium heat. Add the thinly sliced shallots and fry until golden and crispy, about 3-5 minutes. Remove and drain on paper towels.
Assembly

Combine and Serve
In a large serving bowl, toss the fried Brussels sprouts with the fish sauce vinaigrette. Garnish with fried shallots, fresh mint, and basil leaves before serving.
