Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Place the cut potato strips in a bowl of cold water. Let them soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the water and pat the potato strips dry with paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry for about 5-7 minutes or until they are golden brown and crispy.

Drain and Season
Remove the fries from the oil and place them on paper towels to drain excess oil. While still hot, sprinkle with salt.

Prepare the Ingredients
If using fresh tomatoes, chop them roughly. If using canned tomatoes, drain excess liquid.

Blend the Tomatoes
In a blender or food processor, combine the tomatoes, apple cider vinegar, brown sugar, garlic powder, onion powder, salt, and black pepper. Blend until smooth.

Simmer the Ketchup
Pour the blended mixture into a saucepan and bring to a gentle simmer over medium heat. Reduce heat to low and let it simmer for about 20-25 minutes, stirring occasionally.

Cool and Serve
After simmering, remove from heat and let the ketchup cool. Serve it alongside the freshly fried fries.
