Prepare the Potatoes
Wash the fingerling potatoes thoroughly and cut them in half lengthwise. Set aside.

Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside on a paper towel to drain. Leave the bacon fat in the skillet.

Sauté the Shallots
In the same skillet with the bacon fat, add the chopped shallots. Sauté for 2-3 minutes until they become translucent and fragrant.

Crumble the Bacon
Crumble the cooked bacon and add it back to the skillet. Stir everything together and allow it to heat for another 2 minutes.

Serve the Hash
Divide the potato hash among plates. Top each serving with a fried egg, sprinkle with grated Parmesan cheese, and add a serving of pickled vegetables on the side.
