Bacon and Pork Belly Preparation

Cook the Bacon
In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain excess grease.

Cook the Pork Belly
In the same skillet with the remaining bacon fat, add the pork belly. Cook on medium-low heat for about 15-20 minutes, turning occasionally, until it is crispy and fully cooked. Remove from heat and let it rest for 5 minutes before slicing.

Prepare the Slaw
In a large bowl, mix together the shredded green cabbage and grated carrots. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, salt, black pepper, and sugar. Pour the dressing over the cabbage mixture and toss until evenly coated. Refrigerate for at least 30 minutes to let the flavors meld.

Assemble the Sandwich
Toast the burger buns in a skillet with butter until golden brown, about 2-3 minutes. Layer each bun with sliced pork belly, crispy bacon, a slice of Swiss cheese, and a generous portion of slaw. Top with the other half of the bun.
