Coconut-Lime Slaw
Method
Prepare Chicken Wings
- 1
Preheat your oven to 400°F (200°C).
- 2
In a large bowl, combine the chicken wings, olive oil, salt, and black pepper. Toss until the wings are evenly coated.
Make Jerk Marinade
- 3
In a separate bowl, whisk together garlic powder, onion powder, ground allspice, thyme, cayenne pepper, ground cinnamon, nutmeg, brown sugar, soy sauce, lime juice, and minced habanero pepper.
- 4
Pour the jerk marinade over the chicken wings and toss to ensure all wings are well coated. For optimal flavor, marinate for at least 1 hour, or overnight in the refrigerator.
Bake Chicken Wings
- 5
Spread the marinated chicken wings on a baking sheet lined with parchment paper.
- 6
Bake in the preheated oven for 40-45 minutes, turning halfway through, until the wings are golden brown and crispy.
Prepare Coconut-Lime Slaw
- 7
In a large bowl, combine shredded green cabbage and grated carrots.
- 8
In a separate bowl, whisk together coconut milk, lime juice, honey, and salt.
- 9
Pour the coconut dressing over the cabbage and carrots, and toss to combine. Let it sit for at least 15 minutes to allow flavors to meld.
Serve
- 10
Once the chicken wings are done baking, remove from the oven and let cool for a few minutes.
- 11
Serve the jerk caramel chicken wings hot with the coconut-lime slaw on the side.
