    Prepare the Sofrito Home Fries

    Peel and dice potatoes into small cubes. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until golden brown and crispy, about 15 minutes. Stir in sofrito sauce and cook for an additional 2-3 minutes. Set aside.

    Cook the Chorizo and Carnitas

    In the same skillet, add mini chorizo and cook for about 5 minutes until browned. Add pork carnitas and stir until heated through. Set aside.

    Fry the Eggs

    In a separate pan, fry the eggs sunny-side up or to your preference.

    Make the Cheese Quesadilla

    Heat a tortilla in a skillet. Sprinkle half with shredded cheese, fold the tortilla, and cook until the cheese melts and the tortilla is golden brown, about 3-4 minutes. Repeat with the second tortilla.

    Heat vegetable oil in a deep pan for frying. Pipe churro dough into the hot oil in a spiral shape and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels, then roll in cinnamon sugar.

    On a large plate, arrange the fried eggs, mini chorizo, pork carnitas, cheese quesadilla, and sofrito home fries. Add a generous scoop of guacamole on the side. Serve churros as a sweet finish.
