Preparation Steps

    Prepare the Crust

    In a mixing bowl, combine chocolate crumbs and melted butter. Press the mixture into the bottom of a springform pan to form a crust. Bake at 350°F (175°C) for 10 minutes and let cool.

    Make the Cheesecake Filling

    In a large bowl, beat the cream cheese and sugar until smooth. Add in the eggs, sour cream, vanilla extract, and grated Mexican chocolate. Mix until well combined.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust. Bake at 325°F (160°C) for about 50-60 minutes, or until the center is set. Allow to cool, then refrigerate for at least 4 hours or overnight.

    Prepare the Strawberry-Mezcal Sauce

    In a saucepan, combine strawberry puree and mezcal. Simmer over medium heat until slightly thickened, about 10 minutes. Let cool.

    Make the Lime Marshmallow Topping

    In a small bowl, dissolve the gelatin powder in 2 tablespoons of water. In a saucepan, heat mini marshmallows, lime zest, and 1/4 cup water until melted. Stir in the gelatin and mix until smooth.

    Assemble the Cheesecake

    Spread the lime marshmallow mixture over the cooled cheesecake. Drizzle the strawberry-mezcal sauce on top. Chill for an additional 30 minutes before serving.
