Prepare the Mahi-Mahi
Preheat a skillet over medium-high heat. Rub the Mahi-Mahi fillets with blackening seasoning on both sides.

Cook the Mahi-Mahi
Add a little oil to the skillet and sear the fillets for about 3-4 minutes on each side, or until they are cooked through and have a nice blackened crust.

Make the Slaw
In a bowl, combine the thinly sliced red cabbage with a pinch of salt and a squeeze of lime juice. Toss to combine and set aside.

Warm the Tortillas
In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side.

Assemble the Tacos
On each tortilla, place a piece of blackened Mahi-Mahi, top with red cabbage slaw, drizzle with sour cream remoulade, and finish with aji amarillo sauce.

Serve
Serve the tacos immediately with extra lime wedges on the side.
