Prepare glass

Chill a coupe or Nick & Nora glass in the freezer or fill it with ice water while you build the cocktail.

Absinthe rinse

Pour 0.125 oz absinthe into the chilled serving glass, swirl to coat the inside, then discard any excess (or pour out and set glass upside down to drain). This adds an herbal backbone to the drink.

Muddle herbs

In a cocktail shaker, place 6 fresh mint leaves and the thyme sprig. Gently press (do not pulverize) with a muddler to release oils. You want aromatic lift without bitter chlorophyll.

Add base liquids

Add 2 oz gin, 1 oz blanc vermouth, 0.5 oz fresh lemon juice, and 0.25 oz simple syrup to the shaker.

Dry shake (if using egg white)

If using egg white, add 0.5 egg white to the shaker. Seal and 'dry shake' vigorously without ice for 20–30 seconds to emulsify and create foam.

Wet shake

Add ice to fill the shaker about two-thirds. Shake vigorously for 12–18 seconds until the shaker is frosty to the touch to chill and dilute properly.

Double strain

Double strain the mixture (through the shaker strainer and a fine mesh strainer) into the absinthe-rinsed chilled glass to remove herb bits and small ice shards, ensuring a smooth texture.

Finish & Serve

Top and garnish

Gently top the cocktail with 1 oz club soda to brighten the drink and lift the aromatics. Slap a mint sprig between your palms to activate the oils, then place it on the surface along with a lemon twist. Optionally, finish with one light twist of cracked black pepper over the top for a faint spicy note.

Serve

Present immediately while the foam and soda are lively. Stirring is not necessary; the drink should arrive aromatic and lightly effervescent.
