Honey-Ginger Syrup (prepare ahead)

Make syrup

Combine 1/2 cup water, 1/2 cup honey and thinly sliced tablespoon of fresh ginger in a small saucepan. Bring to a gentle simmer over medium heat, stirring to dissolve the honey. Simmer 3 minutes to infuse ginger, then remove from heat and cool to room temperature, covered. Strain out ginger. Refrigerate in a sealed container; keeps 2 weeks.

Prepare glass

Fill a highball or Collins glass with about 1 cup crushed ice (or use regular ice if preferred).

Muddle blackberries

If using fresh blackberries instead of purée: place 1 oz (about 3–4 medium) blackberries in a mixing glass or shaker and gently muddle until broken down but not completely pulverized. If using purée, measure 1 oz into the shaker.

Add citrus, syrup and spirit

Add 1/2 oz fresh lemon juice, 1/2 oz honey-ginger syrup, 2 oz chilled vodka and optional 1/4 tsp allspice dram (if using) into the shaker with the muddled berries or purée.

Shake briefly (dry/light shake)

Add a small handful of ice to the shaker and shake vigorously for about 8–10 seconds to chill and integrate flavors. This also helps extract additional berry juice.

Strain and top with seltzer

Double-strain the shaken mixture into the prepared glass over the crushed ice to remove seeds and solids. Top with 8 oz chilled unsweetened sparkling water, pouring gently to preserve carbonation. Stir once gently with a bar spoon to marry the layers.

Garnish and finish

Skewer 2–3 fresh blackberries on a pick and place on the rim along with a lemon wheel. Add a mint sprig if desired. Serve immediately with a straw.

Adjustments for sweetness/acidity

Taste and adjust: if too tart, add 1/4 oz more honey-ginger syrup; if too sweet, add another 1/4 oz lemon juice. For more berry intensity, add 1/2 oz extra blackberry purée and reduce seltzer by 1/2 oz to keep balance.
