Preparation Steps

Prepare the Vegetables
Preheat the oven to 400°F (200°C). Slice the red bell peppers and red onion into thin strips. Remove the outer layers of the roasted garlic head to expose the cloves.

Roast the Vegetables
Toss the red bell peppers and red onion with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the preheated oven for about 20 minutes until they are tender and slightly charred.

Combine the Ingredients
In a large bowl, combine the roasted bell peppers, red onion, Kalamata olives, and roasted garlic (squeezed out of the skin). Crumble the goat cheese and add it to the mixture.

Garnish with Parmesan
Grate the Parmesan cheese over the top of the mixture and gently toss everything together until well combined.

Serve
Transfer the Toscana mixture to a serving dish and drizzle with a little more olive oil if desired. Serve warm or at room temperature.
