Prepare the Roast
Season the chuck roast with salt, black pepper, and thyme on all sides.

Sear the Meat
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned roast and sear it for 3-4 minutes on each side until browned.

Combine Ingredients in Slow Cooker
Place the seared roast in the slow cooker. Add the chopped vegetables, minced garlic, bay leaves, Worcestershire sauce, and beef broth.

Cook the Roast
Cover and cook on low for 8-10 hours or until the meat is tender and easily pulls apart with a fork.

Serve
Remove the roast and vegetables from the slow cooker. Let the roast rest for a few minutes before slicing. Serve warm with the broth and vegetables.
