Roasting the Vegetables
Preheat your oven to 400°F (200°C). Place the jalapeños, tomatoes, red onion, and garlic on a baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper. Roast for about 25-30 minutes, or until the vegetables are charred and softened.

Blending the Salsa
Allow the roasted vegetables to cool slightly. Transfer them to a blender or food processor. Add lime juice and cilantro. Blend until you reach your desired consistency. Taste and adjust seasoning with more salt or black pepper if needed.

In a large skillet, heat vegetable oil over medium-high heat. Fry each corn tortilla for about 1-2 minutes on each side until they are golden and crispy. Transfer to a paper towel-lined plate to drain excess oil.
