Prepare the Pork
Season the pork shanks with salt and black pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear the pork shanks on all sides until browned. Remove and set aside.

Add Cranberries and Wine
Stir in the sun-dried cranberries and pour in the Pinot Noir. Bring to a simmer, scraping the bottom of the pot to deglaze.

Combine Ingredients
Return the pork shanks to the pot. Add the broth and thyme. Bring to a boil, then reduce to a simmer.

Braise the Pork
Cover the pot and let it braise on low heat for about 2 to 2.5 hours, or until the pork is tender and falling off the bone.

Serve
Once everything is cooked, serve the pork osso bucco hot, garnished with fresh parsley.
