Potato Chips Preparation

Slice the Potatoes
Wash and slice the russet potatoes into thin rounds, about 1/8 inch thick. Rinse the slices in cold water to remove excess starch.

Dry the Potatoes
Spread the potato slices on a clean kitchen towel and pat them dry to remove as much moisture as possible.

Heat the Oil
In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add potato slices to the hot oil in small batches, frying until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Chips
While the chips are still hot, sprinkle them with sea salt to taste.

Combine Ingredients
In a medium bowl, mix together sour cream, mayonnaise, dried dill weed, garlic powder, onion powder, lemon juice, and fresh ground black pepper until well combined.

Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld.
