Make the Tequila-Cranberry Glaze
In a small saucepan, combine 1/2 cup of cranberry juice, 1/4 cup of tequila, 2 tbs of honey, and 1 tsp of cayenne pepper. Bring to a simmer over medium heat and cook until reduced by half, about 10 minutes. Set aside.

Prepare the Mahi Mahi
Brush the Mahi Mahi fillets with olive oil and season with salt and black pepper. Preheat the grill to medium-high heat.

Grill the Mahi Mahi
Grill the Mahi Mahi fillets for about 4-5 minutes on each side, or until cooked through and grill marks appear. In the last minute of cooking, place a slice of Swiss American cheese on each fillet to melt.

Prepare the Herb-Lemon Aioli
In a small bowl, mix together 1/2 cup of mayonnaise, the juice of 1 lemon, 1 tsp of garlic powder, and 1/4 cup of chopped fresh herbs (like parsley and chives).

Assemble the Sandwich
Spread the herb-lemon aioli on the bottom half of each burger bun. Place the grilled Mahi Mahi with melted cheese on top, drizzle with the spicy tequila-cranberry glaze, and finish with the top half of the bun.
