    Prepare the Glaze

    In a small saucepan, combine tequila, cranberry juice, honey, and red pepper flakes. Bring to a simmer over medium heat and let it reduce for about 10 minutes, or until slightly thickened. Stir occasionally.

    Cook the Salmon

    Heat olive oil in a skillet over medium-high heat. Season the salmon filet with salt and black pepper. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes. Flip the salmon and cook for an additional 3-4 minutes or until cooked through.

    Prepare the Corn and Cranberries

    In a separate pan, heat the sweet corn until warmed through. Stir in the sun-dried cranberries and cook for an additional 2 minutes.

    Plate the Dish

    On a plate, place a generous serving of the sweet corn and cranberry mixture. Top with the cooked salmon filet and drizzle the spicy tequila-cranberry glaze over the top.
