Preparation and Cooking

    Prepare the Ingredients

    Chop the carrots, potatoes, onion, and slice the mushrooms. Mince the garlic.

    Sear the Roast

    In a large skillet, heat a little oil over medium-high heat. Season the beef roast with salt and pepper and sear on all sides until browned. Transfer to the slow cooker.

    Layer the Vegetables

    Place the chopped carrots, potatoes, diced onion, and sliced mushrooms around the roast in the slow cooker.

    Add Liquids and Seasonings

    Pour the beef broth and red wine over the roast and vegetables. Add minced garlic, dried thyme, and dried rosemary.

    Cook the Pot Roast

    Cover and cook on low for 8-10 hours or until the beef is tender and easily shreds with a fork.

    Make the Mashed Potatoes

    Boil peeled and chopped Yukon Gold potatoes in salted water until tender. Drain and mash with butter and milk until creamy. Season with salt to taste.

    Plate a mound of mashed potatoes, top with the pot roast and vegetables, and serve with home-baked bread and butter.
