Prepare the Vegetables
Wash and dry the baby spinach. Remove the stems from the cherry tomatoes and cut them in half. Dice the red bell peppers and slice the red onion thinly.

Sauté the Onions and Peppers
In a large skillet, heat the olive oil over medium heat. Add the sliced red onion and diced red bell peppers. Sauté for about 5 minutes until they are soft.

Add Spinach and Tomatoes
Add the baby spinach and halved cherry tomatoes to the skillet. Cook for another 2-3 minutes until the spinach is wilted.

Season the Veggies
Sprinkle with salt, black pepper, and balsamic vinegar. Stir to combine and cook for another minute.

Finish with Goat Cheese
Remove from heat and crumble the goat cheese over the warm veggies. Toss gently to combine.
