Creole Smothered Corn Bread

Method

Creole Smothered Corn Bread Preparation

  1. 1

    Prepare the Corn Bread

Preheat the oven to 400°F (200°C). In a mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar. In another bowl, whisk together the milk, eggs, and melted butter. Combine the wet and dry ingredients and stir in the chopped green onions. Pour the batter into a greased baking dish and bake for 20-25 minutes or until golden brown.

  2. 2

    Make the Crawfish-Shrimp Etouffee

In a large skillet, heat 2 tablespoons of butter over medium heat. Add 1 chopped onion, 1 chopped green bell pepper, and 1 chopped celery stalk. Sauté until softened, about 5 minutes. Stir in 2 minced garlic cloves and cook for another minute. Add 1 pound of crawfish tails and 1 pound of shrimp, along with 2 cups of chicken broth, 1 tablespoon of Worcestershire sauce, and 2 cups of diced tomatoes. Season with salt, pepper, and cayenne to taste. Simmer for about 15-20 minutes, until the shrimp are cooked through.

  3. 3

    Serve

Cut the corn bread into squares and serve topped with the crawfish-shrimp etouffee. Garnish with additional green onions if desired.
