Chicken-Fried Chicken Breast
Method
Preparation & Cooking
- 1
Prepare the Chicken
Place the boneless chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
- 2
Marinate the Chicken
In a bowl, combine the buttermilk, salt, black pepper, garlic powder, onion powder, and paprika. Add the chicken breasts and marinate for at least 1 hour in the refrigerator.
- 3
Prepare the Breading
In a shallow dish, place the flour. In another bowl, beat the eggs. Remove the chicken from the buttermilk marinade, allowing excess to drip off, then dip each piece into the flour, followed by the egg, and back into the flour for a double coating.
- 4
Fry the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully place the breaded chicken breasts into the oil, cooking for 4-5 minutes on each side or until they are golden brown and cooked through.
- 5
Drain and Serve
Remove the fried chicken from the skillet and place on a plate lined with paper towels to drain excess oil. Serve hot with Old South Chicken Cream Gravy.
