Preparation Steps
- 1
Cook the Pasta
In a large pot, bring water to a boil and add a pinch of salt. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
- 2
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced onion and red bell pepper. Sauté until the vegetables are tender and lightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.
- 3
Cook the Chicken
In the same skillet, add the chicken breasts and season with salt and black pepper. Cook for about 6-7 minutes on each side or until fully cooked and no longer pink in the center. Remove from the skillet, let rest for a few minutes, then slice into strips.
- 4
Make the Alfredo Sauce
In the skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Gradually stir in the grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.
- 5
Combine Everything
Add the cooked fettuccine, sautéed vegetables, and sliced chicken to the skillet with the Alfredo sauce. Toss until everything is well coated. Cook for an additional 2-3 minutes to heat through.
- 6
Serve
Serve the Chicken Alfredo warm, garnished with extra Parmesan cheese and fresh parsley if desired.
