Bar-B-Que Chicken and Caramelized Red Onions
Method
Preparation and Cooking
- 1
Prepare the Onions
Thinly slice the red onions. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt, cooking until they become soft and caramelized, about 15-20 minutes, stirring occasionally.
- 2
Cook the Chicken
While the onions are caramelizing, season the chicken breasts with salt and black pepper. In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the chicken breasts, cooking for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C).
- 3
Add the Sauce
Once the chicken is cooked, pour the Spicy Tequila-Cranberry Bar-B-Que Sauce over the chicken, ensuring each piece is well-coated. Let it simmer for an additional 5 minutes to warm the sauce through.
- 4
Serve
Plate the chicken and top with the caramelized red onions. Serve with your choice of sides.
