    Wash the baby spinach thoroughly and set aside. Slice the portabella mushrooms, red onion, and cherry tomatoes.

    Sauté the Onions and Mushrooms

    In a large skillet, heat olive oil over medium heat. Add the sliced red onion and sauté for about 3 minutes until translucent. Add the portabella mushrooms and cook for an additional 5-7 minutes until they are tender.

    Mince the garlic and add it to the skillet. Sauté for 1 minute until fragrant. Then, add the baby spinach to the skillet. Cook until wilted, about 2-3 minutes.

    Add the cherry tomatoes to the skillet, sprinkle with salt and black pepper, and stir gently for another 2 minutes until the tomatoes are warmed through.
