Prepare the Vegetables
Wash the baby spinach thoroughly and set aside. Slice the portabella mushrooms, red onion, and cherry tomatoes.

Sauté the Onions and Mushrooms
In a large skillet, heat olive oil over medium heat. Add the sliced red onion and sauté for about 3 minutes until translucent. Add the portabella mushrooms and cook for an additional 5-7 minutes until they are tender.

Combine with Tomatoes
Add the cherry tomatoes to the skillet, sprinkle with salt and black pepper, and stir gently for another 2 minutes until the tomatoes are warmed through.

Drizzle balsamic vinegar over the mixture, toss to combine, and remove from heat.
