Tamal Dough Preparation

    Prepare the Dough

    In a large mixing bowl, combine the corn flour, baking powder, salt, and ground cumin.

    Mix in Broth and Oil

    Gradually add the chicken or pork broth and vegetable oil to the dry ingredients, mixing well until a smooth dough forms.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for about 20-30 minutes.

Filling Preparation

    Sauté Vegetables

    In a skillet over medium heat, add a little oil and sauté the diced onion and bell pepper until soft, about 5-7 minutes.

    Add Garlic and Spices

    Stir in the minced garlic, shredded chicken or pork, cumin powder, salt, and pepper. Cook for another 5 minutes until heated through.

Assembly and Cooking

    Prepare the Tamal

    Take a portion of the dough (about 1/4 cup) and flatten it on a corn husk or parchment paper. Place a spoonful of the filling in the center.

    Fold and Wrap

    Fold the sides of the husk over the filling and then fold the bottom up to secure the tamal. Repeat with remaining dough and filling.

    Steam the Tamales

    Place the tamales upright in a steamer basket and steam for about 1 hour, or until the dough is firm and cooked through.

Salsa Criolla Preparation

    Mix Salsa Ingredients

    In a bowl, combine the thinly sliced onion, lime juice, chopped cilantro, salt, and pepper. Mix well and let it sit for at least 10 minutes to develop flavors.
