Cooking the Pasta

Boil the Water
In a large pot, bring 4 liters of water to a boil over high heat.

Add Salt
Once the water is boiling, add 1 tablespoon of salt to the water.

Cook the Spaghetti
Add 400 grams of spaghetti to the boiling salted water and cook according to the package instructions or until al dente, usually about 8-10 minutes.

Drain the Pasta
Once the spaghetti is cooked, reserve 1 cup of the pasta cooking water, then drain the spaghetti in a colander.
Preparing the Salsa Verde

Blend the Ingredients
In a food processor, combine 2 cups of fresh basil, 1 cup of fresh spinach, 100 grams of parmesan cheese, 50 grams of pine nuts, and 2 garlic cloves.

Add Olive Oil
With the processor running, slowly drizzle in 100 ml of olive oil until the mixture is smooth.

Season the Pesto
Add 1 tablespoon of lemon juice, salt, and black pepper to taste. Blend again until well combined.
Combining and Serving

Mix Pasta and Sauce
In a large mixing bowl, combine the drained spaghetti with the salsa verde. If the mixture is too thick, add a little reserved pasta water to achieve the desired consistency.

Serve the Tallarin Verde hot, garnished with extra parmesan cheese and a sprinkle of black pepper, if desired.
