Prepare Vegetables
While the noodles are cooking, slice the red onion, tomatoes, and bell pepper into thin strips. Mince the garlic cloves and chop the green onions.

Prepare Chicken (if using)
If you're using chicken, cut the chicken breast into thin strips and season lightly with salt and black pepper.

Stir-fry the Chicken
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the chicken strips (if using) and stir-fry for about 5-7 minutes until cooked through. Remove from the pan and set aside.

Stir-fry the Vegetables
In the same skillet, add another tablespoon of sesame oil. Add the minced garlic and stir-fry for 30 seconds until fragrant. Then, add the sliced red onion, bell pepper, and tomatoes. Stir-fry for 3-4 minutes until the vegetables are tender.

Combine Ingredients
Add the cooked noodles and stir-fried chicken (if using) to the skillet with the vegetables. Pour in the soy sauce and oyster sauce, and sprinkle with black pepper. Toss everything together and stir-fry for another 2-3 minutes until everything is heated through and well combined.
Serving

Garnish and Serve
Remove from heat, garnish with fresh cilantro and chopped green onions. Serve hot and enjoy your Tallarin Saltado!
